🥦 Vegetarian Caunj Alfredo Pasta

🛒 Ingredients:

  • Pasta (fettuccine, penne, or rotini) – 250g

  • Olive oil – 2 tablespoons

  • Garlic – 3 cloves, minced

  • Bell peppers (red, yellow, green) – 1 cup, sliced

  • Mushrooms – 1 cup, sliced

  • Zucchini – ½ cup, sliced

  • Heavy cream – 1 cup

  • Parmesan cheese – 1 cup, grated

  • Cajun seasoning – 1½ tablespoons (or to taste)

  • Salt & pepper – to taste

  • Fresh parsley – for garnish

  • Lemon juice – optional

👩‍🍳 Instructions:

  1. Cook Pasta

    • Boil pasta in salted water until al dente. Reserve some pasta water and drain.

  2. Sauté Veggies

    • In a large skillet, heat olive oil over medium heat.

    • Add garlic, then bell peppers, mushrooms, and zucchini.

    • Sauté for 5–7 mins until soft and slightly browned. Season with a little Cajun seasoning.

  3. Make Sauce

    • Lower heat and pour in heavy cream. Simmer gently.

    • Add Parmesan cheese and stir until melted and smooth.

    • Add remaining Cajun seasoning, salt, and pepper.

    • Adjust thickness with pasta water if needed.

  4. Combine

    • Toss in cooked pasta and stir to coat.

    • Add a splash of lemon juice for a fresh kick (optional).

    • Garnish with parsley.
