🥦 Vegetarian Caunj Alfredo Pasta
🛒 Ingredients:

Pasta (fettuccine, penne, or rotini) – 250g

Olive oil – 2 tablespoons
-
Garlic – 3 cloves, minced
-
Bell peppers (red, yellow, green) – 1 cup, sliced
-
Mushrooms – 1 cup, sliced
-
Zucchini – ½ cup, sliced
-
Heavy cream – 1 cup
-
Parmesan cheese – 1 cup, grated
-
Cajun seasoning – 1½ tablespoons (or to taste)
-
Salt & pepper – to taste
-
Fresh parsley – for garnish
-
Lemon juice – optional

👩🍳 Instructions:

Cook Pasta

Boil pasta in salted water until al dente. Reserve some pasta water and drain.

Sauté Veggies
-
In a large skillet, heat olive oil over medium heat.

Add garlic, then bell peppers, mushrooms, and zucchini.

Sauté for 5–7 mins until soft and slightly browned. Season with a little Cajun seasoning.

Make Sauce
-
Lower heat and pour in heavy cream. Simmer gently.

Add Parmesan cheese and stir until melted and smooth.
-
Add remaining Cajun seasoning, salt, and pepper.
-
Adjust thickness with pasta water if needed.

Add a splash of lemon juice for a fresh kick (optional).
